In 1985, a small kitchen on Lewis Avenue became the anchor of a family dream. Kum Wah's founder brought with him the techniques and temperaments of Cantonese cooking as practiced in the households of Guangdong — not the simplified versions found elsewhere, but the real craft: high flame, precise timing, ingredients selected at dawn.

Today, his children and grandchildren stand beside him at the pass. The menu has grown, but the philosophy has not: nothing is rushed, nothing is shortcuts, and every guest is treated as if they have just taken a seat at the family table.

Har gow, siu mai, char siew bao, and cheung fun — all hand-folded before dawn and steamed to order. Served with our house chili oil and black bean sauce.

Air-dried for twenty-four hours, roasted in a wood-fired oven until the skin shatters like glass and the meat stays impossibly tender. Served with plum sauce and steamed buns.

Fresh squid, lightly dusted and flash-fried, then tossed over an open flame with garlic, chili, and scallion. Finished with a whisper of five-spice and served sizzling.
